Sprinklicious Chocolate Chip Cookies
Maybe these should be called rainbow magic cookies - it's impossible not to love a cookie that's so bright and cheery! Sprinkles will always brighten your day - and when combined with chocolate...even more so. These cookies are really easy and yummy. They don't offer immediate gratification since you have to chill the dough for a couple of hours, but the actual active time you need to put into them is small. And they're well worth the wait!
Sprinklicious Chocolate Chip Cookies
yield: 3 1/2 - 4 dozen cookies
time: 3 hours (mostly chilling time)
Ingredients:
- 2 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup butter, softened
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 Tbsp milk
- 1 Tbsp vanilla
- 1/2 cup chocolate chips
- 1/2 cup white chocolate chips
- 1 1/4 cup rainbow sprinkles
Directions:
- In medium mixing bowl, whisk together flour, baking soda, and salt.
- In bowl of your stand mixer, cream butter and sugars until smooth.
- Add egg and mix.
- Add milk and vanilla and mix until incorporated.
- Gradually add your flour mixture, again mixing until incorporated.
- Add chocolate chips and sprinkles, while mixing on low just until combined.
- Cover bowl tightly with plastic wrap and chill for two hours.
- Preheat oven to 350 degrees and line baking sheets with parchment paper.
- Scoop dough into balls, using about 1 1/2 Tbsp of dough per cookie. Cookies should be spaced about 2" apart.
- Bake for 10-12 minutes, until edges are just turning golden.
- Let sit on baking sheets for about 3 minutes, then remove to wire racks to cool completely.
Even the uncooked dough is rainbow-tastic!
Make sure to leave plenty of room between your cookies so they don't run together.
