Chicken Avocado Tacos with Cilantro Lime Sauce



Mmmmm...tacos. Who doesn't love tacos? And these are full of flavor, plus, they're quick and easy! They look pretty and seem gourmet with very little effort. Easy to make the next time you want Mexican flavor without leaving the house!

Chicken Avocado Tacos

servings: 8 tacos
time: 30 minutes

Ingredients:

  • 1 lb chicken breast
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 Tbsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1 Tbsp olive oil
  • 1 tsp lime juice
  • 2 avocados, sliced or chopped
  • 8 small tortillas
Cilantro Lime Sauce:
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 clove garlic, minced
  • 1 tsp lime juice
  • salt & pepper to taste

Instructions:

  1. In a medium bowl, whisk together 2 Tbsp olive oil, 2 cloves garlic, chili powder, cumin, onion powder, and 1/4 tsp salt.
  2. Cut chicken into bite-sized pieces and toss in marinade. Refrigerate for at least 10 minutes.
  3. Meanwhile, combine sauce ingredients in a small bowl and whisk until thoroughly mixed.
  4. Heat large skillet over medium heat and cook chicken for about 10 minutes, or until cooked through.
  5. Heat griddle over medium heat, and warm tortillas for about 1 minute on each side.
  6. Fill each tortilla with chicken and avocado and top with sauce. Serve!
These were still delicious the next day!


This cilantro lime sauce is quick, easy, and delicious. 

Gently warm the tortillas, but don't toast them too long or they will get brittle. 

Spicy, flavorful chicken!
