Blueberry Coffee Cake
We're thinking for January we'll skip the over-the-top desserts out of respect for those of you who have adopted New Year's resolutions to eat healthy. Don't worry, we'll be back with incredibly indulgent desserts in February once everyone has fallen off the healthy eating wagon again. Meanwhile, we're not going crazy and giving up sugar or anything like that. We baked a brunch food packed with antioxidant-rich blueberries - you can totally justify eating this regardless of any resolutions made, right? We won't tell anybody about that streusel topping you ate.
Blueberry Coffee Cake
time: 1 hr. 15 min (mostly baking time)
servings: 10 slices
Ingredients:
Streusel topping:
- ¾ cup sugar
- ½ cup flour
- 1 tsp cinnamon
- 6 Tbsp butter, cold and cubed
Cake:
- 2 cups flour
- ¾ cup sugar
- 2 ½ tsp baking powder
- ¾ tsp salt
- ¼ cup butter, melted
- ¾ cup milk
- 1 egg
- 2 cups blueberries
Glaze:
- ½ cup powdered sugar
- ¼ tsp vanilla
- 2 tsp milk
Directions:
- Preheat oven to 375 degrees and grease a 9" springform pan.
- Combine streusel ingredients in a small bowl. Cut in butter with two knives or a pastry blender and refrigerate until ready to use.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add butter, milk, and egg, and mix until just combined.
- Carefully fold in blueberries. Note: fresh blueberries are best for coffee cake, but it is not blueberry season. We used frozen, wild blueberries. We recommend adding them to the dough frozen so they don't turn to mush as you mix. This will increase your bake time by 10-15 minutes or so, as it will chill the cake batter.
- Spread cake batter in pan and top with streusel.
- Bake for 40-50 minutes, until inserted toothpick comes out clean. (Additional time will be needed if you used frozen berries, as mentioned above. Our cake took about 65 minutes to bake. Just keep checking it with a toothpick until it is done!)
- Let cake cool for 10 minutes, and make the glaze as it cools - combine all glaze ingredients in a small bowl and whisk. Drizzle on top of cooled cake with a spoon.
