Spinach Artichoke Soup


Have you ever wanted to just devour spinach artichoke dip with a spoon? Well, guess what - now you can! And this version is called soup, so it's a legit meal and actually socially acceptable! There's really no excuse for not making this soup. It's a one-pot dish, and ridiculously fast and easy. The only real danger is that you might want to make and eat it all the time.

Spinach Artichoke Soup

servings: 4-6
time: 20 minutes

Ingredients:
  • 2 Tbsp butter
  • 1 onion, chopped
  • 3 Tbsp garlic, minced
  • 16 oz. frozen spinach, thawed
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 Tbsp flour
  • 4 cups vegetable broth
  • 28 oz. artichoke hearts, drained and chopped
  • 8 oz. cream cheese
  • 1 cup heavy cream
  • 1 cup grated parmesan
  • parmesan shavings and parsley for garnish, if desired
Directions:
  1. In a large pot, melt butter over medium heat.
  2. Add onions and saute for 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Add spinach and cook for a couple of minutes, until heated through. If you forgot to thaw your spinach you can even throw it in frozen, it will just take slightly longer to heat.
  5. Add salt, pepper, and flour and cook for 1 minute.
  6. Add broth and artichoke hearts and cook for 5 minutes.
  7. Add cream cheese and stir frequently until it is completely melted.
  8. Reduce heat to low and add heavy cream.
  9. Stir in parmesan cheese.
  10. Serve!
 This soup is pretty much the perfect comfort food!
