Loaded Pull-apart Bread


This bread, you guys. We could pretty much live on bread anyway, but especially once you've loaded it up with cheese and yummy vegetables. It's like a whole meal in a loaf of bread! And did we mention how cheesy it is?? It's also dangerously fast and easy to make if you just buy the bread pre-made as we did. Our local bakery has amazing specialty breads each week, and their parmesan olive loaf was perfect for this.

Loaded Pull-apart Bread

Ingredients:
  • 1 loaf of fresh bakery bread
  • 2 Tbsp olive oil
  • 1 cup canned artichoke hearts, drained and chopped
  • 1/2 cup kalamata olives, drained and chopped
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1/2 cup crumbled feta
  • 1 cup monterey jack cheese, shredded
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • salt & pepper to taste
Instructions:
  1. Preheat oven to 350 degrees and line rimmed baking sheet with parchment paper.
  2. With a serrated knife, slice the bread into 1-2" vertical strips. Rotate the bread and slice into 1-2" horizontal strips, so the top of the bread is cut into cube shapes. Be careful not to slice all the way through the bread! You want the bottom of the bread to stay intact.
  3. Gently pour your oil all over the bread. Add your other ingredients into the crevices you made with your knife until they are full.
  4. Sprinkle with cheeses.
  5. Bake for 10-15 minutes, or until cheese is melted.
  6. Pull pieces off and enjoy!
