Sprinklicious Chocolate Chip Cookies


Maybe these should be called rainbow magic cookies - it's impossible not to love a cookie that's so bright and cheery! Sprinkles will always brighten your day - and when combined with chocolate...even more so. These cookies are really easy and yummy. They don't offer immediate gratification since you have to chill the dough for a couple of hours, but the actual active time you need to put into them is small. And they're well worth the wait!

Sprinklicious Chocolate Chip Cookies

yield: 3 1/2 - 4 dozen cookies
time: 3 hours (mostly chilling time)

Ingredients:
  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter, softened
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 Tbsp milk
  • 1 Tbsp vanilla
  • 1/2 cup chocolate chips
  • 1/2 cup white chocolate chips
  • 1 1/4 cup rainbow sprinkles
Directions:
  1. In medium mixing bowl, whisk together flour, baking soda, and salt.
  2. In bowl of your stand mixer, cream butter and sugars until smooth.
  3. Add egg and mix.
  4. Add milk and vanilla and mix until incorporated.
  5. Gradually add your flour mixture, again mixing until incorporated.
  6. Add chocolate chips and sprinkles, while mixing on low just until combined.
  7. Cover bowl tightly with plastic wrap and chill for two hours.
  8. Preheat oven to 350 degrees and line baking sheets with parchment paper.
  9. Scoop dough into balls, using about 1 1/2 Tbsp of dough per cookie. Cookies should be spaced about 2" apart.
  10. Bake for 10-12 minutes, until edges are just turning golden.
  11. Let sit on baking sheets for about 3 minutes, then remove to wire racks to cool completely.


Even the uncooked dough is rainbow-tastic!

Make sure to leave plenty of room between your cookies so they don't run together.
