Spinach Artichoke Soup
Have you ever wanted to just devour spinach artichoke dip with a spoon? Well, guess what - now you can! And this version is called soup, so it's a legit meal and actually socially acceptable! There's really no excuse for not making this soup. It's a one-pot dish, and ridiculously fast and easy. The only real danger is that you might want to make and eat it all the time.
Spinach Artichoke Soup
servings: 4-6
time: 20 minutes
Ingredients:
- 2 Tbsp butter
- 1 onion, chopped
- 3 Tbsp garlic, minced
- 16 oz. frozen spinach, thawed
- ½ tsp salt
- ¼ tsp pepper
- 3 Tbsp flour
- 4 cups vegetable broth
- 28 oz. artichoke hearts, drained and chopped
- 8 oz. cream cheese
- 1 cup heavy cream
- 1 cup grated parmesan
- parmesan shavings and parsley for garnish, if desired
Directions:
- In a large pot, melt butter over medium heat.
- Add onions and saute for 5 minutes.
- Add garlic and cook for 1 minute.
- Add spinach and cook for a couple of minutes, until heated through. If you forgot to thaw your spinach you can even throw it in frozen, it will just take slightly longer to heat.
- Add salt, pepper, and flour and cook for 1 minute.
- Add broth and artichoke hearts and cook for 5 minutes.
- Add cream cheese and stir frequently until it is completely melted.
- Reduce heat to low and add heavy cream.
- Stir in parmesan cheese.
- Serve!
This soup is pretty much the perfect comfort food!
